Peach Bruschetta with Creamy Goat Cheese

It’s peach season and I love to find new ways to eat this deliciously sweet fruit.  I have been making tomato bruschetta at least twice a week for lunch this summer and as I was looking at the beautiful peaches on my counter top I thought – why not?  I love the freshness of bruschetta.  You can make so many different kinds with so many different fruits and vegetables, but this peach bruschetta with creamy goat cheese is something special.

Peaches and minced basil dressed simply with honey, lime juice and a pinch of salt is spooned over creamy goat cheese on crusty slices of toasted bread.  It is absolute heaven on a plate.  I loved mine sprinkled with chili lime seasoning at the end to add just a pinch of salt and heat.  This is an easy, but fancy looking appetizer that will dress up your next dinner or date night!

Note, you can use white or yellow peaches for this recipe, (or one of each!)  Additionally, if you are not a fan of goat cheese, try whipped ricotta or cream cheese!

 

Ingredients:

  • 2 large peaches, diced
  • 2 Tbsps fresh basil, finely chopped
  • Pinch of salt
  • 1 Tbsp honey
  • 2 Tbsp lime juice
  • 1 thin, long baguette, or similar French/Italian Bread, cut slightly on the diagonal in to 1/2 inch slices
  • Olive oil to drizzle
  • 8oz goat cheese
  • Optional Garnish:  Chili lime seasoning

Instructions:

  1. In a mixing bowl add the peaches, chopped basil, and salt
  2. In a small bowl, whisk together the honey and lime juice
  3. Drizzle the honey and lime mixture over the peach mixture, toss gently with a fork until well combined
  4. Place the sliced baguette bread on a baking sheet and drizzle with olive oil then toast the bread under the broiler until it just starts to brown around the edges (usually takes about 2-3 minutes)
  5. Spread some goat cheese on to the pieces of toast and spoon some of the peach mixture over the top
  6. Optionally sprinkle with a little chili lime seasoning, then serve immediately!
