Some days I just need a quick dinner that takes minimum effort but has maximum deliciousness. I first made this Peach Glazed Pork & Stuffing recipe when we were newly weds and recently randomly remembered it on a day I was fancying stuffing! The sweet and sticky glaze pairs perfectly with the salty, savory meat and the perfectly baked pork literally just melts in your mouth. The best part is that after taking just a few minutes to throw it together you can sit on the couch with your feet up while the oven does the rest and no-one will be the wiser. 😉
Ingredients:
- 2 pkgs Stove Top stuffing mix
- 1/2 cup butter, melted
- 3 cups hot water
- 4-6 boneless pork chops, seasoned both sides with salt and pepper
- 2/3 cup peach preserves
- 2 Tbsp Dijon mustard
Instructions:
- Heat oven to 375 and spray a 13×9 pan with cooking spray.
- In a bowl, combine the stuffing mix, melted butter and hot water. Stir together and set to the side.
- In a smaller bowl, combine the peach preserves and Dijon mustard.
- In a hot, buttered skillet, brown the seasoned pork chops over high heat until they have a slight golden brown crust on each side.
- Place the stuffing mixture in the bottom of the 13×9 pan, then place the pork chops gently on the top.
- Spoon the peach/dijon mixture over the pork chops and bake uncovered for 40 minutes or until chops are done.
- Serve immediately with veggies and/or salad!
