Heat oven to 375 and spray a 13×9 pan with cooking spray.
In a bowl, combine the stuffing mix, melted butter and hot water. Stir together and set to the side.
In a smaller bowl, combine the peach preserves and Dijon mustard. Set aside.
Season your pork chops each side with a little salt and pepper.
In a hot, buttered skillet, brown the seasoned pork chops over medium-high heat until they have a slight golden brown crust on each side.
Place the stuffing mixture in the bottom of the 13×9 pan, then place the pork chops gently on the top.
Spoon the peach/Dijon mixture over the pork chops and bake uncovered for 40 minutes or until chops are done.
Serve immediately with veggies and/or salad!
