Glazed Pork Chops & Stuffing Bake

Pork chops baked over stove top stuffing slathered with a peach mustard glaze. A great quick dinner for those nights you just don't want to cook!

Ingredients
  

  • 2 pkgs Stove Top stuffing mix
  • 1/2 cup butter, melted
  • 2-1/2 cups hot water
  • 6 boneless pork chops (3/4 to 1 inch thick)
  • 2/3 cup peach preserves
  • 1 Tbsp Dijon mustard

Instructions
 

  • Heat oven to 375 and spray a 13×9 pan with cooking spray.
  • In a bowl, combine the stuffing mix, melted butter and hot water. Stir together and set to the side.
  • In a smaller bowl, combine the peach preserves and Dijon mustard. Set aside.
  • Season your pork chops each side with a little salt and pepper.
  • In a hot, buttered skillet, brown the seasoned pork chops over medium-high heat until they have a slight golden brown crust on each side.
  • Place the stuffing mixture in the bottom of the 13×9 pan, then place the pork chops gently on the top.
  • Spoon the peach/Dijon mixture over the pork chops and bake uncovered for 40 minutes or until chops are done.
  • Serve immediately with veggies and/or salad!
