Chocolate Fudge Pudding Cake

Chocolate fudge pudding, also known as self saucing pudding is a deliciously decadent dessert that my mum used to make us in when we were growing up in England.  This recipe is soooooo nostalgic for me, but you definitely don’t need childhood memories to enjoy it now!  If you like chocolate cake and you like hot fudge sauce you are going to love this easy throw together combination!  

 

The cake ends up suspended over a warm, gooey puddle of hot fudge sauce that you can spoon right over the top of each piece before serving with no extra effort!  You are going to think there is no way that it’s going to come out correctly when you put it in the oven because you will just see a big puddle of water on the top, but don’t worry – the magic will happen!  Finish this dessert with a drizzle of heavy cream or a scoop of ice cream at the end if you like for an extra level of decadence.  There is no question that you should definitely make this for your fam tonight! 

Ingredients:

Batter:
  • 3/4 cup granulated sugar
  • 1 cup AP flour
  • 3 Tbsp cocoa powder
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup milk
  • 1/3 cup butter, melted
  • 1-1/2 tsp vanilla 
Topping:
  • 1/2 cup granulated sugar
  • 1/2 cup firmly packed light brown sugar
  • 4 Tbsp cocoa powder

 1-1/2 cups hot water

Instructions:

  1. Preheat oven to 350°.
  2. For the batter:  In a large bowl, whisk together the sugar, flour, cocoa, baking powder, and salt.  
  3. Stir in the milk, melted butter and vanilla, mixing until smooth.  
  4. Pour/scrape into an ungreased  8-inch square glass baking pan, (or something comparable… I have a 7×11 dish that is perfect for this!)
  5. For the topping:  In a small bowl, whisk together the sugar, brown sugar, and cocoa.  Sprinkle evenly all over the top of the batter.  
  6. Gently pour the hot water over the top of the topping.  Do not stir!  (Yes, it just looks like a big puddle of chocolate water on top.)
  7. Bake for 25-35 minutes, or until center is almost set.  
  8. Let cool for 10-15 minutes, then serve.  Spoon the hot fudge sauce in the bottom of the pan over the cake and serve with ice cream, whipped cream or heavy cream.
