Quick & Easy Chocolate Mug Cake

I don’t know about you but sometimes after a long day I just need a little serving of something sweet.  When that craving hits there is nothing better than a single serving piece of cake that is quick to throw together and ready to eat in just a couple of minutes!  This is the easiest, most beautifully moist Chocolate Cake in a Mug recipe.  It cooks in the microwave in just over a minute and is the perfect little treat to throw together for those crazy days you just need it.

This recipe has no eggs or butter – just a few simple pantry ingredients so you can literally make it any time.  The hubby and I love one of these on the weekend while we are sitting in bed catching up on our favorite TV shows.  They are fantastic by themselves, but also delicious with a small scoop of ice cream or a drizzle of heavy cream.  The best thing about these is we don’t have an entire cake sitting around that we just munch on the entire weekend – these have built in portion control!

A couple of tips for this recipe:

  • Use a mug that is at least 12oz large, but it works fine in a larger mug if that is all you have – it won’t fill up as far, but that leaves more room for a scoop of ice cream!  
  • You can spray the mug with a little non-stick spray if you want the mug to clean just a little easier.
  • Since all microwaves are a little bit different, you will need to find that perfect sweet spot of how long to cook your cake.  You don’t want to overcook it or it will be dry!  Start with 60 seconds, then take a peek.  We like ours at 70 seconds – they come out warm, moist and delicious with a little gooeyness from the chocolate chips.

Ingredients:

  • 3 Tbsp flour
  • 3 Tbsp sugar
  • 1 Tbsp cocoa powder
  • 1/4 tsp baking powder
  • 1/8 tsp salt
  • 3 tbsp milk
  • 1 tbsp canola oil
  • 1/4 tsp vanilla
  • 2 Tbsp chocolate chips, divided

Instructions:

  1. In a 12 oz or larger mug, whisk the flour, sugar, cocoa powder, baking powder and salt together with a small whisk or fork until well combined
  2. Add the milk, canola oil and vanilla and stir well
  3. Stir in 1 Tbsp of the chocolate chips
  4. Microwave on high for 60-75 seconds, then let sit in the microwave for one minute
  5. Sprinkle with the other Tbsp of chocolate chips and serve with a small scoop of ice cream or a drizzle of heavy cream if desired
