dip with crackers

Looking for something yummy to take to a game night or just to munch on while watching your favorite television show with the hubs? Look no further.  My oh my, what is not to love about bacon and cheese?!?!?!  This dip is heavenly.  We ate half of it with crackers, then the next day we spread it on French bread and toasted it in the oven till it was all melty for lunch… both ways were to die for. This dip comes together in just a few minutes… the hardest part is literally cooking the bacon!

There are two easy ways you can cook the bacon for this recipe.  The first is this easy oven baked method which is quick with very little clean up.  However, I have also just used my kitchen shears to cut up multiple pieces of the raw bacon at a time in to thin strips right in to the frying pan.  Turn the heat on high and use a wooden spoon to separate the pieces as they cook and become nice and crispy.  Spoon the bacon with a slotted spoon on to a paper towel and let cool.

We love serving this dip with Nabisco’s Chicken in a Biskit crackers the best, but really, any crackers, tortilla chips, or torn up crusty bread will work beautifully!

Ingredients:

  • 8oz bacon, cooked up nice and crisp then chopped in to small pieces
  • 1 cup sour cream
  • 1 cup mayo
  • 2 cups sharp cheddar cheese
  • 1 tsp dry ranch dressing mix (I use Hidden Valley Ranch)
  • 1/2 tsp garlic powder
  • 1/2 tsp dry mustard powder
  • 1/2 tsp black pepper
  • 4 dashes hot sauce
  • 4 green onions, finely chopped
  • 4 Tbsp fresh parsley, finely chopped

Instructions:

  1. Cook your bacon first – let it get nice and crisp, then drain off all the fat and put the pieces on a paper towel to cool while you mix up the other ingredients.
  2. In a mixing bowl, add the sour cream, mayo, cheese, dry ranch dressing mix, garlic powder, dry mustard powder, black pepper, hot sauce, green onions and parsley and combine well.
  3. Once the bacon is cool, add it to the dip and stir to combine.
  4. Refrigerate the dip at least an hour before serving it.
