Cheesy Buffalo Chicken Dip

If you are looking for a delicious salty, spicy, savory dip to add to your appetizer repertoire, this Spicy Buffalo Chicken Dip is going to blow your mind.  This dip uses shredded rotisserie chicken to help you save cooking time and has all the flavors of buffalo hot wings without all the mess!  You are going to love the ooey gooeyness of this scoopable party favorite.

Rotisserie chickens are one of my favorite short cuts.  I like to get them from Costco or Sam’s Club because they are big and freshly made several times a day for just a few dollars!  The meat is always perfectly juicy and seasoned and they can help cut down prep time for appetizers and dinner entrees too!  I just cut the meat off when I get home and store in the refrigerator to use for things like this dip, chicken salad,  copycat Olive Garden chicken & gnocchi soup, chimichangas, chicken and broccoli casserole, or even a quick rice bowl during the week.

A couple of tips for this recipe:

  • I love to use rotisserie chicken because it makes this recipe super easy to throw together, but you can for sure season some chicken with salt and pepper and cook it then shred it if you prefer.
  • This dip honestly isn’t that spicy, it just has a kick from the buffalo sauce.  If you want it spicier, you can add red pepper flakes or some pinches of chipotle powder!
  • You can use regular shredded mozzarella cheese for this recipe, but I ALWAYS use Kraft Creamy Melt Shredded Mozzarella.  It’s way creamier thanks to the little bit of cream cheese they put in it and it melts beautifully – way better than the others in my opinion.  (Not a paid advertisement.)

Ingredients:

  • 1 cup Frank’s buffalo sauce
  • 8oz cream cheese, cut in to cubes
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 3/4 cup blue cheese dressing (can sub ranch dressing)
  • 2 cups shredded rotisserie chicken
  • 2 cups shredded sharp cheddar cheese, divided
  • 1/2 cup shredded Kraft Creamy Melt Mozzarella cheese
  • Chopped chives or green onions for garnish – optional

Instructions:

  1. Preheat the oven to 375 degrees. Spray a pie baking dish with non-stick cooking spray.
  2. In a large saucepan, combine the buffalo sauce, cream cheese, garlic powder, onion powder, and blue cheese dressing.  Cook over medium high heat, stirring until all smooth and melted together.
  3. Stir in 1 cup of the sharp cheddar cheese until melted, then stir in the shredded chicken.
  4. Pour the mixture in to your prepared pie dish.
  5. Sprinkle with the remaining sharp cheddar and the mozzarella.
  6. Bake at 375 for 15 minutes.
  7. Garnish with chopped chives or green onions before serving.  Serve with tortilla chips, crusty bread, crackers, or carrots and celery!
