Another favorite Christmas treat recipe that I have been making for well over 20 years. 5 ingredient no fuss rocky road fudge! I love fudge, but I don’t love candy thermometers or spending tons of time standing at the stove. This recipe is hands down the easiest one I know, but the fudge is so creamy and delicious people will never know it only took you ten minutes to throw together! This goes to friends with the peanut butter balls each year and it’s super easy to make last minute if you forgot someone.
Variations: You can omit the walnuts and marshmallows and add in chopped candy bars or anything you desire to change up the flavor of the fudge. We have done chopped up Oreos, snickers bars, milky ways, peanut butter cups, Andes mints, pistachios and craisins, or just plain nuts!
Ingredients:
- 4 cups chocolate chips
- 2 cans sweetened condensed milk (NOT evaporated milk)
- 2 tsp vanilla extract
- 1 cup chopped walnuts
- 2-3 cups mini marshmallows
Instructions:
- Line a 9×13 pan with waxed paper.
- In a large heavy saucepan melt the chocolate chips with the condensed milk over medium heat and beat with a wooden spoon until smooth.
- Remove from heat and stir in the vanilla extract.
- Stir in your walnuts and marshmallows, and pour the mixture into the prepared pan.
- Let cool on counter, then chill for 1-2 hours.
- Pop out the fudge using the waxed paper to help you. (You can dip the bottom of the pan in warm water for a couple of minutes if it needs help coming out.)
- Peel off the waxed paper and cut in to cubes.
