Thai peanut is one of my favorite flavors because it is a little tangy, a little sweet and a little spicy, so when I decided I needed to try and add more veggies in to my life, this Thai Peanut Chicken Salad was one of the first things I thought of.  Pre-shredded coleslaw mix and rotisserie chicken make this a quick and easy summer lunch (or dinner) to throw together!  Add some chopped cucumber, red pepper, spring onions, and cilantro and you have a delicious, veggie packed, super crunchy salad that I’m confident will become one of your favorites!

I love to serve this salad family style in a large serving bowl that just goes in the middle of the table, but you can also make it as a mason jar salad!  Just put a few heaping tablespoons of the dressing in the bottom of a 16oz jar, then layer coleslaw, cucumber, red pepper, shredded chicken, green onions, cilantro and peanuts.  Keep the jars sealed in the refrigerator and when it’s time to eat, you can shake it all up in the jar, or empty in to a bowl and toss.  Perfect to take for lunch, or serve to family who get home at different times!

The peanut dressing is such sweet and tangy deliciousness.  Sometimes I just make a batch without the rest of the salad and keep it in a small mason jar in the refrigerator.  It’s lovely to dip chicken in – even chicken nuggets!  Just give it a good shake in the jar every time you get it out to use.  It should last up to a week in the refrigerator.

A couple of tips for this recipe:

  • You can substitute oven roasted turkey for the rotisserie chicken, or any cooked chopped or shredded chicken!
  • If you are not a big sesame oil fan, you can replace it with plain olive oil, however, for us that is the little something that makes all the difference!
  • If you want a spicier dressing, you can add more red pepper flakes.
  • Not a cilantro lover?  Try fresh parsley instead, or leave it out all together.
  • If you want to add some other veggies, try shaved raw Brussels sprouts, snow peas, extra shredded carrot or even raw broccoli!
  • This salad is best eaten as soon as the dressing is poured over the salad, so you can make ahead, but keep the dressing in a separate bowl or jar until you want to eat it.

Ingredients:

  • 3 cups pre-shredded coleslaw mix
  • 1 cup rotisserie chicken, shredded or diced
  • 1 cup diced English cucumber
  • 1/2 cup diced red bell pepper
  • 2 green onions, chopped
  • 1/4 cup chopped cilantro
  • 1/4 cup crushed peanuts

Dressing:

  • 1/4 cup peanut butter
  • 2 Tbsp honey
  • 2 Tbsp rice vinegar
  • 2 Tbsp soy Sauce
  • 1 Tbsp lime juice
  • 1 tsp sesame oil
  • 1 tsp sesame seeds
  • 1 tsp minced garlic
  • 1 tsp dried ginger
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/8 tsp red pepper flakes

Instructions:

  1. In a large mixing bowl, add the coleslaw mix, rotisserie chicken, cucumber, red pepper, green onions, cilantro, and peanuts.
  2. For the dressing, in a small mixing bowl, add the peanut butter, honey, rice vinegar, soy sauce, lime juice, sesame oil, sesame seeds, minced garlic, ginger, salt, pepper and red pepper flakes.  Whisk well until creamy and completely combined.
  3. Pour the dressing over the salad and toss until well combined then eat immediately!
