Stuffing is something at the Thanksgiving or Christmas table that you really don’t have to put a lot of effort in to because guess what? Stove Top already does it pretty good. I know, I know – there are some great recipes out there handed down from generation to generation, but honestly, Stove Top Stuffing is a favorite at our house, and with a few tweaks to doctor it up, you can make a delicious semi-homemade side dish that takes very little effort.
We are talking about Stove Top Stuffing mix with Cranberries, Apples and Pecans today. Yes, this is a big shortcut dish, but you know what? I love shortcuts when I’m throwing together a huge meal for the holidays! This stuffing goes so well with turkey, ham, sweet potatoes, mashed potatoes, mac and cheese, funeral potatoes, and cranberry sauce!
Now, we all know that stuffing is technically stuffed in the bird and dressing is what it is technically called if it is baked outside the bird, but in our house we call it stuffing no matter where it is baked, and since Stove Top calls it stuffing too, well – dressing is outvoted.
A couple of tips for this recipe:
- Chop your apples in to bite size pieces. I love to use this Johnny Apple Peeler – it cores, peels and slices the apples in just seconds, and then all you have to do is chop to bite size pieces. Such a time saver for any apple dishes!
- Another delicious addition to this stuffing bake is ground sausage, (specifically Jimmy Dean Sage Sausage.) I don’t usually add it when I am making stuffing for the holidays, but I love it in these Stuffed Acorn Squash! If you want to add it to this bake, just crumble and cook in a frying pan until the little bits are super crispy, then stir it in to the stuffing mix before adding the water and butter!
- I like the Stove Top Stuffing for Chicken, but you can absolutely play around with other flavors – the cornbread is pretty good too.
Ingredients:
- 2 boxes Stove Top Stuffing for Chicken
- 1/2 cup dried cranberries
- 1/2 cup apple, chopped
- 1/2 cup chopped pecans
- 1/2 tsp ground black pepper
- 2-1/2 cups hot water
- 1/2 cup melted butter
- 1/3 cup fresh parsley, chopped
Instructions:
- Preheat the oven to 350. Lightly spray a 9×13 or equivalent baking dish with non-stick cooking spray
- In a large mixing bowl, combine the Stove Top stuffing mixes, dried cranberries, chopped apple, pecans, and black pepper with a spatula until well combined.
- Stir in the hot water and melted butter, mix, let sit for 5 minutes, then stir again with a fork.
- Stir in the chopped fresh parsley with the fork.
- Scrape the mixture in to your prepared 9×13 dish.
- Bake at 350 for 25-30 mins until the top is just lightly crunchy and golden brown.
- Optional – Sprinkle with just a pinch of additional parsley if desired to make it look pretty then serve!
