Sheet Pan Parmesan Pork Chops & Potatoes

I’m all about fast and easy dinners right now.  I started a new infusion treatment for my MS and it has taken some adjusting to get used to.  I can’t complain, it going pretty well, but sometimes after a long day at work I need something that basically cooks itself and this sheet pan Parmesan Pork Chops and Potatoes recipe fits the bill.  It’s incredibly easy to throw together but extremely tasty!

I like to use the thick pork chops for this recipe because they cook the same time as the potatoes, meaning once it is in the oven I don’t have to touch it.  Literally you put foil on the baking sheet, toss the pork chops and potatoes in olive oil and seasoning and bake.  Told you it was easy!  What makes this so tasty is the combination of seasonings: grated parmesan, (like the kind you get in the pasta aisle at the grocery store – Kraft or store brand is fine), ranch seasoning mix, smoked paprika, some Herbs de Provence, (or Italian seasoning if you don’t have this on hand), salt and pepper is all you need!

 

A couple of tips for this recipe:

  • I get my inch thick pork chops at Sams Club – they are very reasonably priced there and come six to a package.
  • I also buy my baby potatoes at Sams Club or Costco.  They come in a 5lb bag of mixed red and yellow for much less than I pay at the grocery store in my area and I just use half the bag so I have two meals out of it.
  • Pork must register 145 degrees to be safe to eat.  I like mine more at 150 or more.  I always check that it’s higher than 150 with an instant read thermometer before serving.  An instant read thermometer will change your meat cooking life – way better than guessing if it’s done!
  • I love Hidden Valley Ranch Seasoning Mix – you can buy it in large containers or small packets – I have not found homemade ranch mix to give the same results.

Ingredients:

  • 6 (1-inch thick) pork chops
  • 2-1/2 pound baby potatoes, (yellow, red or mixed.)
  • 1/4 cup olive oil

Seasoning Mix:

  • 2 Tbsp grated parmesan cheese (found in the spaghetti aisle)
  • 2 Tbsp powdered Hidden Valley Ranch Seasoning mix
  • 1 tsp smoked paprika
  • 1 tsp Herbs de Provence (or Italian seasoning)
  • 1 tsp salt
  • 1 tsp pepper

Instructions:

  1. Preheat oven to 400 and line a large baking sheet with foil.
  2. Place the pork chops on one half of the prepared baking sheet.
  3. Wash your potatoes and pat dry.  If they are larger in size, cut them in half.  Place them on the other half of the baking sheet.
  4. Drizzle the olive oil over the pork chops and the potatoes.
  5. In a small bowl, use a fork to mix together the parmesan cheese with the rest of the seasonings.
  6. Sprinkle about 3/4 of the seasoning all over the chops and potatoes and use your hands to toss it all together well.
  7. Sprinkle the additional seasoning over the top of the chops and pat down.
  8. Bake for 25-30 minutes until your pork chops are at least 150 degrees and your potatoes are fork tender.
  9. Serve with a side salad or veggies!  (We like corn or corn on the cob.)
