Green Beans Almondine (Amandine)

Green beans are a traditional addition to Thanksgiving tables across the country, but with all the heavy, creamy dishes already on the table, this is a dish I like to keep more simple.  I am a firm believer that most vegetables are at their best when they are roasted in the oven and this dish is no exception.  Green beans are one of the quickest vegetables to roast in the oven, taking only about 15 minutes until they are ready to serve.

The word “Almondine” (the Americanized version of the French word Amandine), simply means garnished with almonds in some way.  These green beans are roasted in a mixture of olive oil and butter with salt pepper and LOTS of minced garlic, then drizzled with fresh lemon and sprinkled with almonds.  Watch how fast they will disappear off your table!

If you want to add some different flavor combinations to the dish, try adding thinly sliced sweet or red onion when you toss the green beans in the oil and butter mixture.  You can also sprinkle with some shaved or shredded Parmesan cheese when they come out of the oven.  To add the crunch from the more traditional green bean casserole, you could even sprinkle some French’s Crispy Fried Onions over the top!

Ingredients: 

  • 1lb green beans
  • 1 Tbsp olive oil
  • 1 Tbsp melted butter
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 5 cloves garlic, minced
  • Juice of 1/2 lemon
  • 1/4 cup slivered almonds

Instructions:

  1. Preheat the oven to 425.  Spray a baking sheet with non-stick spray.
  2. Wash your green beans and cut the ends off of them.
  3. Add them to a mixing bowl and add the oil, melted butter, salt and pepper.  Toss until well coated.
  4. Spread the green beans out on the prepared baking sheet in a single layer.
  5. Bake at 425 on the middle rack for about 15 minutes or until they are starting to brown a bit.  (I usually give them a toss with a spatula once about half way through.)
  6. Remove the tray from the oven and squeeze the lemon juice over the top, toss, then sprinkle with the slivered almonds and serve!
