Quick Korean Beef Taco Meat

We seem to always have plenty of ground beef on hand in our freezer and I love how quick of a meal tacos is to put together on busy nights, but I sometimes crave something different from regular tacos.  This Korean style beef is so quick to throw together and so full of flavor that it makes a lovely change up from the norm of taco seasoning.

This meal is versatile, just like taco night, because you can put out a slew of different toppings that allow the family to build their own masterpieces catered to their own preferences.  Some of my favorites include crunchy chow mein noodles, sliced almonds, chopped peanuts, coconut, shredded carrots and daikon, bean sprouts, chopped red onion, chopped cucumbers, mandarin oranges, chimichurri, fresh cilantro, limes or sesame seeds.

You can serve this dish as a rice bowl, in tortillas or my favorite – butter lettuce cups.  Throw some rice in the rice cooker and make the beef and you should have dinner on the table in less than 30 minutes!

Ingredients:

  • 2 pounds ground beef
  • 1 Tbsp olive oil
  • 1 tsp sesame oil
  • 1 Tbsp minced garlic
  • 1/2 onion, shredded
  • 1/2 cup brown sugar
  • 1/2 cup soy sauce
  • 1/4 cup hoisin
  • 1 Tbsp rice wine vinegar
  • 1/2 Tbsp sriracha
  • 1 tsp ground ginger
  • 1/2 tsp red pepper flakes
  • 1/4 tsp ground black pepper

Instructions:

  1. In a skillet pan, brown the ground beef over medium high heat with the olive oil, sesame oil, minced garlic and shredded onion.
  2. Once browned, remove any excess fat from the pan.
  3. In a separate small bowl, whisk together the brown sugar, soy sauce, hoisin, rice vinegar, sriracha, ground ginger, red pepper flakes and black pepper.
  4. Pour the mixture over the browned beef and let cook for 4-5 minutes, stirring every minute or so.
  5. Increase the heat to high and continue to cook until the meat get a little crispy, using a spatula to flip it over every now and then to make sure it doesn’t burn. (I do another 5 minutes because I like the crispy texture, but you do you.)
  6. Serve over rice garnished simply with scallions or with all your families favorite toppings!
