Apple Berry Crisp or Crumble

With everything that has been going on in the world the past few weeks, I have found myself being more mindful of looking at what we have and making sure things don’t expire or go bad before we use it if we can help it.  Are you feeling the same way?  I don’t think it’s a bad habit to get in to honestly.  It’s meant that we get more creative and create dinners or desserts just based on what ingredients we have sitting around rather than running out to get more food.  

I had apples and berries that needed using up, so I decided it was a fruit crumble/crisp sort of day.  I have had all kinds of crumble toppings, some nut, some oat, some flour, but I like a combination of ALL the toppings and I like a good topping to fruit ratio.  You are going to love this Apple Berry Crisp/Crumble.  The sweet crunchy topping pairs absolutely perfectly with the soft, baked, slightly tart fruit. Serve warm with a scoop of ice cream or some English custard for instant comfort!!

Ingredients:

  • 3-1/2 cups finely chopped apples
  • 2 cups mixed berries
  • 1 Tbsp lemon juice
  • 1/2 cup butter
  • 1/2 cup brown sugar
  • 1/2 tsp cinnamon
  • Pinch nutmeg
  • 1 tsp vanilla

Topping:

  • 1 cup old fashioned oats
  • 1 cup flour
  • 1 cup brown sugar
  • 1/2 cup chopped pecans or walnuts
  • 1/2 cup butter softened

Instructions:

  1. Preheat oven to 350. Grease a 11×7, 9×9, or 8×8 dish.
  2. In a large saucepan add the apples, berries, lemon juice, butter, brown sugar, cinnamon, nutmeg and vanilla. Bring to a light boil, stirring frequently, and let cook 1-2 minutes.
  3. In a separate bowl mix together the oats, flour, brown sugar and chopped nuts. Add the butter and combine with a pastry cutter, fork, or your hands. 
  4. Add 1/2 cup of the topping mixture into the filling mixture, stir and put the filling in the prepared pan. 
  5. Sprinkle the rest of the topping all over the filling.
  6. Bake at 350 for 50 mins. 
  7. Remove from the oven and let cool for at least 15 minutes before serving!
