Slow Cooker Brown Sugar Balsamic Pork

The first time I ever made this Brown Sugar & Balsamic Glazed Pork I did a huge pork loin, almost doubling this recipe, and my sons band who were over for dinner demolished every scrap of it.  It was so incredibly yummy that I cooked it again just a few days later and it’s been a favorite ever since.  Beautifully tender pork, herby rub and a sweet and salty brown sugar balsamic glaze – the combination of these simple ingredients produce the most delicious, comforting meal.

What I love about this recipe is that getting it in the slow cooker is so simple… just a few ingredients to rub on the pork and you can throw it in and let it get started.  Then when it’s closer to dinner time, you can throw the glaze together and start basting while you are preparing your side dishes.  It’s perfect for those mornings when you are rushing to get out of the house, and you get to come home to the most divine smell!  We have served this pork over mashed potatoes, with roast potatoes and even with rice and tortillas.

Ingredients:

  • tsp ground sage
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2-3 cloves garlic, crushed
  • cup water
  • 3-5 pounds boneless pork loin
Glaze:
  • cup brown sugar
  • 3 Tbsp cornstarch
  • 1/2 cup balsamic vinegar
  • cup water
  • 1/4 cup soy sauce

Instructions:

  1. Mix together the sage, salt, pepper and garlic, and rub all over the pork. 
  2. Place the water in the slow cooker, and place the pork on top.  Cook on low for 7-9 hours.
  3. Just over an hour before the pork is finished cooking, make the glaze by mixing together the brown sugar, cornstarch, balsamic vinegar, water and soy sauce in a small saucepan. Bring to a simmer over medium-high heat and stir until mixture thickens, about 3-4 minutes.  
  4. Put aside half of the glaze in a bowl for serving and use the remaining glaze to brush over the pork a few times during the last hour of cooking. 
  5. Optional:  For a more caramelized crust like I have pictured here, remove the pork from the slow cooker once the hour is up and place on a foil lined baking pan.  Top with more glaze, and set under high broiler for 1 to 2 minutes, until bubbly and caramelized.) 
  6. Serve the pork with remaining glaze on the side.
