About a year and a half ago we went to a car dealership down in Lindon to buy a car. While we were there they were doing a cookout for the customers and they did grilled meat on tortillas with sour cream and an amazing chipotle sauce. We asked them where they bought it from, but I guess a temp had picked it up and no one was sure from where. Thus started my mission to try and recreate it.
What we ended up with was a super ugly but absolutely addicting chipotle sauce which has become my hubbies absolute favorite salsa. He makes it once a week and then snacks on it literally all week with tortilla chips, however we also use this as a sauce with grilled meat or on tacos or whatever we want. As a note, this salsa/sauce is quite spicy, so If you like things less spicy, simply reduce the amount of chipotles in adobo.
Ingredients:
- 5-6 tomatoes (we like roma or campari)
- 1 red onion diced
- 1/4 cup canola oil
- 1/2 cup honey
- 1/4 cup balsamic vinegar
- 1/4 cup Dijon mustard
- 1/2 can chipotles in adobo
- zest and juice of 1 lime
- 1/2 bunch cilantro
- 2 tsp minced garlic
- 2 tsp cumin
- 1 tsp salt
- Cracked black pepper
Instructions:
- Throw all ingredients in the blender and blend until completely smooth.
- Refrigerate for at least 4 hours prior to eating so it gets nice and cold. (Store in an airtight container in the refrigerator.)
