Slow Cooker Hawaiian Kalua Pork

Hawaiian kalua pork with sauce and rice

 

We took our family to Kauai, Hawaii a couple of years ago and hands down the best thing we did was go to a traditional Hawaiian Luau.  What a fun night of amazing food and entertainment!  One of the most delicious things we ate was the Kalua Pork – a whole pig wrapped in banana leaves and cooked for hours and hours in a hot pit in the ground which results in the most amazing, salty, smokey yumminess!  I enjoyed it so much that I tried it several different ways on the island including in a Kalua Eggs Benedict.  It was Pure.Heaven.

I don’t have a pit in my yard and I certainly don’t need to cook an entire pig, but it’s pretty easy to replicate that salty, smokey flavor and texture right in your slow cooker and you only need a couple of simple ingredients!  This Slow Cooker Kalua Pork is one of my husbands very favorite dishes and so I often cook it on the weekends so he can have it for lunch several times during the week.

Ingredients

  • 4-5 lb boneless pork roast
  • 1-1/2 Tbsp liquid hickory smoke (or you can use mesquite)
  • 1 Tbsp pink Himalayan salt, (fine)

Instructions:

  1. Prick your pork roast all over with a fork.  
  2. Place it in your slow cooker and pour your hickory smoke evenly all over the top of it.  
  3. Sprinkle the salt over the top of the roast.  
  4. Cook on low for 8-10 hours, then shred with two forks and serve with rice, your favorite sauce and toppings.

My favorite toppings for this pork are pineapple, coconut and sliced almonds.  Add this incredible sweet and spicy chili sauce or this less spicy Huli Huli sauce, and you have PERFECTION!

    This is a literal staple in my weekly rotation!!! Under 5 minutes to get in the crockpot and creates the most tender salty deliciousness!!! We love it with the huli huli sauce but also on nachos 😍
