This quick cucumber & red onion salad is crisp, tangy, and refreshing. Made with a simple vinegar dressing, it’s the perfect easy side dish for any meal.

Ingredients
  

  • 1 large English cucumber sliced thinly
  • 1/2 medium red onion sliced thinly
  • 1/2 cup apple cider vinegar
  • 1/4 cup water
  • 3 Tbsp sugar
  • 1/2 tsp salt
  • 1/2 tsp fresh ground black pepper

Instructions
 

  • Add the thinly sliced cucumber and red onion to a medium bowl.
  • In a separate small bowl, whisk together the apple cider vinegar, water, sugar, salt, and pepper until the sugar is fully dissolved.
  • Pour the dressing over the cucumbers and onions. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, or up to a few hours.
  • When ready to serve, drain off the excess liquid and enjoy chilled.

  • Add herbs: Fresh dill or parsley adds a lovely pop.
