Quick & Tangy Cucumber & Red Onion Salad
This quick cucumber & red onion salad is crisp, tangy, and refreshing. Made with a simple vinegar dressing, it’s the perfect easy side dish for any meal.

1 large English cucumber sliced thinly 1/2 medium red onion sliced thinly 1/2 cup apple cider vinegar 1/4 cup water 3 Tbsp sugar 1/2 tsp salt 1/2 tsp fresh ground black pepper
Add the thinly sliced cucumber and red onion to a medium bowl.
In a separate small bowl, whisk together the apple cider vinegar, water, sugar, salt, and pepper until the sugar is fully dissolved.
Pour the dressing over the cucumbers and onions. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, or up to a few hours.
When ready to serve, drain off the excess liquid and enjoy chilled.
