Pumpkin Chocolate Chip Breakfast Bites

These easy Pumpkin Chocolate Chip Breakfast Bites are soft, chewy and packed with oats, peanut butter, pumpkin and mini chocolate chips.

Ingredients
  

  • 2 cups old-fashioned oats
  • ¼ cup almond flour
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 cup peanut butter
  • ¼ cup honey
  • ⅔ cup canned pumpkin
  • 1 cup mini semi-sweet chocolate chips

Instructions
 

  • Preheat the oven to 350°F. Line a large baking sheet with a silicone baking mat or parchment paper.
  • Add the oats, almond flour, salt, cinnamon, peanut butter, honey, pumpkin, and mini chocolate chips to the bowl of a stand mixer.
  • Using the beater attachment, mix until everything is well combined and the mixture comes together.
  • Using a medium cookie scoop (about 2 tablespoons), scoop the mixture onto the prepared baking sheet. These breakfast bites don't spread while baking, so you can fit all 30 on one large baking sheet.
  • Bake for 17-18 minutes, or until the bottoms are just beginning to turn golden brown and the tops look dry.
  • Remove from the oven and allow the breakfast bites to cool on the baking sheet for at least 10 minutes before transferring them.
  • Store in an airtight container or bag at room temperature.

Notes

Tips for Making Pumpkin Chocolate Chip Breakfast Bites:
  • Use old-fashioned oats. They give these breakfast bites their hearty, chewy texture. I recommend old-fashioned oats rather than quick oats for the best results.
  • Use creamy peanut butter. A smooth peanut butter mixes easily with the other ingredients and gives the bites a nice, consistent texture.
  • Measure the pumpkin carefully. The ⅔ cup of pumpkin gives these bites plenty of pumpkin flavor and moisture without making the mixture too wet.
  • Don't worry about spacing them far apart. These bites don't spread while baking, so you can fit all 30 on one large baking sheet. That's one of my favorite things about this recipe!
  • Use a medium cookie scoop. A 2-tablespoon scoop makes it easy to portion the mixture evenly and gives you about 30 breakfast bites.
  • Don't overbake them. Bake just until the tops look dry and the bottoms are beginning to turn golden brown. This helps keep them soft and chewy.
  • Let them cool on the baking sheet. Give the bites at least 10 minutes to cool before moving them. They'll firm up as they cool and are much easier to handle.
