Cheesy Buffalo Chicken Dip

Cheesy Buffalo Chicken Dip made with tender rotisserie chicken, ranch dressing, hot sauce, and loads of gooey cheese, this dip is a crowd-pleaser.

Ingredients
  

  • 1 cup Frank's buffalo sauce
  • 8 oz cream cheese cut in to cubes
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 3/4 cup blue cheese dressing (can sub ranch dressing)
  • 2 cups shredded rotisserie chicken
  • 2 cups shredded sharp cheddar cheese divided
  • 1/2 cup shredded Kraft Creamy Melt Mozzarella cheese
  • Chopped chives or green onions for garnish - optional

Instructions
 

  • Preheat the oven to 375 degrees. Spray a pie baking dish with non-stick cooking spray.
  • In a large saucepan, combine the buffalo sauce, cream cheese, garlic powder, onion powder, and dressing.  Cook over medium high heat, stirring until all smooth and melted together.
  • Stir in 1 cup of the sharp cheddar cheese until melted, then stir in the shredded chicken.
  • Pour the mixture in to your prepared pie dish.
  • Sprinkle with the remaining sharp cheddar and the mozzarella.
  • Bake at 375 for 15 minutes.
  • Garnish with chopped chives or green onions before serving.  Serve with tortilla chips, crusty bread, crackers, or carrots and celery!

Notes

A couple of tips for this recipe:
  • I love to use rotisserie chicken because it makes this recipe super easy to throw together, but you can for sure season some chicken with salt and pepper and cook it then shred it if you prefer.
  • This dip honestly isn't that spicy, it just has a kick from the buffalo sauce.  If you want it spicier, you can add red pepper flakes or some pinches of chipotle powder!
  • You can use regular shredded mozzarella cheese for this recipe, but I ALWAYS use Kraft Creamy Melt Shredded Mozzarella.  It's way creamier thanks to the little bit of cream cheese they put in it and it melts beautifully - way better than the others in my opinion.  (Not a paid advertisement.)
