Swedish Almond Cake

Swedish Almond Cake, also called visiting cake, is the perfect tea time dessert to serve with coffee or hot chocolate! Easy to make from pantry ingredients.

Ingredients
  

  • 1/2 cup butter, melted (1 stick)
  • 1 cup sugar
  • 2 eggs
  • 1 tsp almond extract
  • 1 cup all purpose flour
  • 1/4 cup sliced almonds
  • Powdered sugar for dusting

Instructions
 

  • Preheat the oven to 350. Spray a 9″ cake pan lightly with non-stick spray. Line the bottom with parchment paper, (or spray with the Bakers Joy non stick spray that contains flour.)
  • In a mixing bowl, whisk together the melted butter and sugar.
  • Whisk in the eggs, one at a time.
  • Whisk in the almond extract, then whisk in the all purpose flour.
  • Pour the batter in to the prepared cake pan and sprinkle the sliced almonds over the top.
  • Bake for 30 minutes at 350. Let cool for 10 minutes before removing from pan. (I run a very thin knife around the edge, flip on to one platter, then flip back on to another.)
  • Let the cake cool, then sprinkle with powdered sugar before serving!
