Rich & Creamy Homemade Fettuccine Alfredo

Rich and Creamy Homemade Fettuccine Alfredo made from butter, cream, garlic, herbs and parmesan makes the perfect bowl of pasta for any weeknight dinner!

Ingredients
  

  • 1/2 Cup Butter
  • 1 tsp Garlic Minced
  • 1 cup Heavy Whipping Cream
  • 1 cup half and half
  • 1/2 Teaspoon Italian Seasoning
  • 1/2 Teaspoon Salt
  • 1/4 Teaspoon Pepper
  • 2 Cups Freshly Grated Parmesan Cheese
  • Up to 1/4 cup hot milk (optional) or pasta water
  • 1 pkg fettuccine noodles – cooked to package directions
  • Freshly chopped parsley for garnish

Instructions
 

  • Melt the butter in a large skillet over medium high heat and add the minced garlic. Let simmer for just a minute.
  • Add in the cream and half and half and whisk until it’s all incorporated and bring back to gently simmering.
  • Whisk in the Italian seasoning, salt and pepper.
  • Add the Parmesan cheese and let slowly melt while stirring.
  • Once the cheese is completely melted, (so that it isn’t stringy in the sauce any longer), whisk in small amounts of the hot milk or pasta water until the sauce is the consistency or thickness you like.
  • Toss the sauce with the cooked fettuccine noodles (cooked according to package directions) and garnish with parsley if desired.

Notes

*Note, you can make this with just 2 cups half and half instead of 1 cup of each, it just won't be quite as thick and creamy.  You can also make it with just 2 cups heavy cream, you may just want a little more milk to thin it out.
