You will need (8) 8oz mason jars for the above quantities. (Wash and dry the jars and lids ahead of time.)
For the graham cracker crust, mix the graham cracker crumbs, sugar and melted butter together until well combined and divide the mixture evenly between all 8 jars, (about 1/4 cup per jar.) Gently press the mixture down to the bottom.
For the key lime filling, in a medium mixing bowl, use a hand mixer to whip together the condensed milk and cream cheese until smooth. Stir in the key lime juice and vanilla. Spoon equal amounts of the mixture in to each jar on top of the graham cracker crust.
For the whipped topping, in a clean mixing bowl, whip together the heavy whipping cream, sugar and vanilla. until you have medium peaks. (Cream stands at a point when you pull the whisk out.) Spoon the cream in to the jars on top of the key lime filling to fill the jar.
You can store these in the refrigerator with the tops on till ready to serve or just serve them immediately. If you want to be a bit more fancy you can choose to garnish with a little lime zest, some grated chocolate, or a slice of lime!
