Rustic Mediterranean Pasta Salad
A creamy, rustic Mediterranean Pasta Salad with bell peppers, red onion, finely chopped olives, parmesan cheese and poppyseed dressing!
Prep Time 20 minutes mins
- 16 oz penne pasta cooked according to directions, drained and cooled
- 1/2 a good size red onion, diced
- 1/2 cup total red & yellow bell peppers, diced
- 1/3 cup sun dried tomatoes, finely diced (in the bag, not in oil)
- 1/3 cup black olives, chopped finely
- 5 oz parmesan shredded cheese
- 1 bottle Lighthouse creamy poppy seed dressing
- Optional: 1/4 cup chopped pine nuts (add a nice crunch, just not something I keep in the pantry)
