Line a baking sheet with foil and spray with plenty of non-stick spray.
Wash your baby potatoes and cut them in to quarters. (You don’t need to peel.) If you use large potatoes, peel and chop in to bite size pieces.
Throw them in a bowl with the olive oil, salt, pepper and your favorite seasoning blend, and toss until well combined.
Spread them in a single layer on your prepared baking sheet and bake, (roast), at 425 degrees for 30-35 minutes then serve immediately. (Garnish with some parsley if desired.)
