Impossible Bacon Cheeseburger Pie

Impossible Bacon Cheeseburger Pie is all the ingredients from a bacon cheeseburger in a pie form bound together with Bisquick, eggs and milk!

Ingredients
  

  • 16 oz bacon
  • 1-1/2 to 2 pounds hamburger
  • 1 tsp salt
  • 1 Tbsp onion powder
  • 1/2 tsp pepper
  • 1/2 cup ketchup
  • 1-1/2 cups shredded sharp cheddar*
  • 2 cups milk
  • 4 eggs
  • 1 cup Bisquick baking mix

Instructions
 

  • Preheat oven to 400 degrees. Spray two 9inch pie pans with non-stick cooking spray and set aside.
  • In a skillet, cut up the bacon in to little bits with kitchen shears, (I cut several slices at a time), and cook over high heat until crispy. Transfer the crispy pieces of bacon to a paper towel lined plate and set aside.
  • Remove any remaining bacon fat from the skillet, then in the same skillet, break up the hamburger meat and brown it with the salt, onion powder and pepper. Once the hamburger meat is cooked through, stir in the ketchup.
  • Put half the hamburger mixture on the bottom of each prepared pie pan. Sprinkle half the cheese in each pan over the top of the hamburger. Sprinkle half the bacon in each pan over the cheese.
  • In a blender, add the milk, eggs and Bisquick baking mix and blend until smooth. (Note: I always put in wet ingredients in to the blender first so the dry don’t get stuck on the bottom.)
  • Gently pour half the egg mixture in to each pie pan over your other ingredients.
  • Bake for 20-25 mins at 400 degrees, cool for 5 minutes, then serve!

Notes

*Note, I have started adding a sprinkle of Kraft Creamy Melt Shredded Mozzarella Cheese in with the sharp cheddar – this cheese really adds a gooey factor so try subbing in about 1/4 cup, (or just add it over the top – you can never have too much cheese in my opinion!)
