Chicken cooked in a aromatic sauce flavored with curry powder, garam masala, ginger and coconut milk is one of my favorite easy chicken dinner recipes.

Ingredients
1Tbspolive oil
1/2Tbspminced garlic
1-1/2 to 2lbchicken tenders cut in to chunks
1tspsalt
1/2tspfreshly cracked black pepper
1Tbsponion powder
2Tbspcurry powder
1Tbspgaram masala
1/2tspginger powder
28ozcan of tomato sauce
13ozcan coconut milk
3Tbspsugar
Parsley or cilantro for garnish
Cooked rice to serve with it
Any toppings you want
Instructions
Heat oil in a large skillet with the minced garlic.
Toss in the chicken tender chunks. Sprinkle the salt, pepper, onion powder, curry powder, garam masala and ginger powder over the chicken and stir it all together. (Yes, it’s a LOT of seasoning.)
Let cook for a few minutes till the chicken has browned and the spices are aromatic.
Pour in the tomato sauce, coconut milk and sugar and stir to combine well.
Bring to a light boil then reduce the heat to medium, cover and simmer for about 25 minutes.
Serve over cooked jasmine rice, (or your favorite cooked rice), and let your guests garnish with their favorite toppings.
Notes
*I have used a jar of tomato basil pasta sauce to replace the tomato sauce in a pinch!
